Hi, Im new here: can a rooster be processed at any season, any day, hot or cold?

Yep.

I went to bed last night thinking to process a few today. Woke up and it was gloomy and rainy, so I thought they'd get to live another day. Well, we got a break and some sunshine late morning, so I'm now down two cockerels.

High summer isn't the best, due to flies. They can be a huge PITA when processing.

Extreme cold also not so great, mostly for your comfort. I'm a wimp about cold, I couldn't imagine trying to pluck a wet bird with cold fingers.

But from a meat point of view, it doesn't matter.
