Roosters or Hens?

Okay so we got two bantam cochins from a local breeder and I think sge took us for a spin. The two chickens in question Penny and Jarsie are supposedly from the same clutch the same age and the same breed. So she says. Now that they are fully grown we are seeing that they look very different. Penny is smaller, her comb and waddle are very small and paler than Jarsie's. Penny is light copper brown with two black feathers in her wings. Jarsie is very pretty has a dark brown base of feathers with lots of iridescent blueish black feathers throughout especially on the tail feathers and a big bright red waddle and comb, also Jarsie has been trying to mount Penny neither of them have started laying yet. Jarsie is very calm and quiet doesn't crow or make loud squawking noises. Also Jarsie has round stubby little wings and no spurs on the legs or extra toes. Now I'm confused on another one of my hens. I have two Jersey Giants who look practically identical except Teller is larger and has a bigger brighter comb and waddle. Today whats got me really stumped is I have had a new layer laying light brown speckled eggs so I knew it was one of the Jersey giants. I assumed it was teller laying the one egg a day bc she looks more mature than Banks the other Jersey Giant, but when I went into the coop today to check to see who was laying it was banks all along. I know its not just that Banks started laying today bc the first few eggs are small and this one looked more developed on the same track as all the other light brown speckled eggs that were sizing up. So the more mature looking Jersey Giant has not started laying yet. Also Teller is very noisy when I try to pick her up as well. I didn't think it would be so gard to sex adult chickens, but i was told these were all females. Lmk if anyone wants any photos or videos and I'll take some.

Oh jeez, what do I do? Should I separate him? Does that mean I have to make him his own coop for the yard? Also will he be safe by himself? Or should I rehome him?
If he isn’t overbreeding the pullets or attacking you then leaving him in with the girls should be perfectly fine

Won't that mess with the eggs? Plus I cant have a bunch of chicks. I dont have enough space for more chickens.
