roosting bar position

Considering how cozy they like to get, a single 4-foot perch placed 12" out from either wall should be fine for up to 8 hens. That provides 6 inches of lateral space per bird and would allow you to place a single catch box below extending out 18" from the same wall. A ground-level litter box/pan below the roost filled with construction/play sand is also an easy and effective way to ease the the cleanup process. Just use a kitty litter scoop and add the sand/waste combo to your garden as fertilizer. Depending on how high the roost bar is, if more than 30" high, i'd also recommend a lower, smaller step up perch to assist hop versus flight to the upper roost bar. This can be as short as 8" sticking out of an adjacent wall.

I like your original idea number two the best. I think one roost would be too crowded, especially in the summer. Unless you are having Bantam chickens.
