If you get a black Ameraucana rooster, you will probably get about half blue and half black offspring (I'm talking about the feather color of the chickens here.) The daughters should all lay eggs in some shade of green, although likely lighter than an "olive egger" is supposed to.
If you really want to make blue chickens that lay olive eggs, try getting Cuckoo Marans hens (black with barring, lay dark brown eggs) and cross with a Splash Ameraucana rooster. Female chicks will be blue, male chicks will be blue with white barring, females should lay olive eggs. I'm guessing that's what Hoover's Hatchery is doing.
