Scallions.... any good recipes?

I have a ton of scallions ready to be picked...Way too many for me to use as I normally do. Have any recipes that use lots of scallions? Can they be frozen ?

I have seen them dried. Its kind of like a condiment to be added to anything as soups or BKpotatoes, salids....ect. Even added to bread recipes.

Ever since I was little, I would dip them in mayo and eat as is.

They go into Green rice:

Cooked rice, can of mushroom soup, chopped spinach or chopped broccoli, sliced green onions, mix it all up and top with cheddar cheese and bake.

or spread flour tortillas with cream cheese and chopped green onions. Roll them up and slice into pinwheels. A very tasty appetizer and good for potlucks and parties.
