Selecting for meat

Hi all.
I was trying to learn something about raising what I have for meat as well as keeping what I want for chicks & eggs.

On the www of BYC I became exhausted combing thru arguments.
So I'm here to ask my friendly fellow Indiana keepers.
Hope the following makes sense:

I presently have 4 white Rock Pullets, & 2 golden Comets & don't need them all.

I also have a year old Blue Copper Marans Roo .

And a BO, BM,BCM, SM, EE, OE, hens
I'm wondering if trying to breed & raise chicks from which of these breeds will give me the most decent bird for the table. And at what age would be best to be tender.
What do you think?

Presently, I have various chicks; ages 2-11 weeks OEs, BCM X BO,
BCM X CHERRY EGGERS,
& pure Marans. Some of the hens they came from had good sized breasts when they were young poulets.
I am selling some, & realized I'll need to cull some Roos; at 12 wks to be tender (I've been told), but wondering if someone knows which of my chicks would be best to let get to fryer size, & how old would that be?
I'm wondering if trying to breed & raise chicks from any / which of these breeds will any give me a decent bird for the table.?

I'm asking a lot.
