Should I be concerned??

For standard chicken eggs, yes.

What's your temperature and humidity readings?
My incubator fluctuates from 98.9 to 100.5 so anywhere in between there. The humidity is 57 but I can’t get it any higher without overflowing the channels. They are leghorn eggs, jersey giant eggs, Easter egger, RIR, Delaware, and buff orpington.

Higher humidity helps the eggshell and membrane to soften and break easily for the chick to get out.
The humidity still isn’t going up, but I’m thinking maybe it’s just the panel that’s wrong? There’s water droplets forming in the top

Water droplets... yep, it's humid enough.
I think the incubator just isn’t sensing it for whatever reason, I do have an extra thermometer in the bator and it’s correct so 🤷‍♀️. Thanks!
