My quail eggs 15 days now. And this is the second day with no movement since they rocked. I'm getting a bit antsy...

Previously they wriggled a lot for 2 days, but stopped, so should I?

Do not worry about the rocking. Wait for day 22 before you throw them out or mess with them.
the less you mess with the incubator and the eggs, the better the hatch rate.

Okay so now I'm going to spray water on the incubator cover to increase humidity. I'm scared to death one dies inside :D;; How can I check if they need help coming out?

You can do a float test to see if they are still alive. Put the eggs in a container with warmish water. If the eggs wiggle, they're alive. What I sometimes do is hold the egg against my ear and tap it with my fingernail. If there's a live chick in there it answers by tapping from inside or I can hear it move.

will both test affect the moisture of the egg? I'm not sure if I should leave it in incubator for that or pick it out
