It depends on the breed like polish are for show because they don’t have much meat and aren’t super productive in egg laying, and leghorns are layers because they aren’t super fat and aren’t very pretty, Cornish cross are meat birds because they can’t lay eggs or live very long, and buff Orpington’s can be show, meat and egg layers

To be able to tell for good show quality is to have the standards of perfection beside you and compare it to the photos of the parents and/or the bird you want. Usually breeders will state what their birds are breed for. Hatcheries mainly breed for egg production and not type.

Just because a bird is bred for eggs/meat doesn’t mean it’s not show quality it all depends on whether or not they match the description for breed characteristics in the APA standard of perfection
If you want show quality birds you have to buy from breeders that breed specifically to the standard and generally I’d recommend buying adults because then you already know what they look like while chicks are more of a gamble in whether or not there show quality

I breed silkies and although I do not show my birds; I just like them to be showable should someone purchase them. How do I know? It's not that hard really, but I just Googled it, read about 5 reputable sources and pretty much now know what to look for.

For starters, you need to start with show quality stock. I found reputable several reputable breeders, mostly out of state. I've purchased hatching eggs from about 4 different breeders this year, for a total of about 6 times.
