Silkie hen with wonky foot?

My sweet neighbor rescued a hen from slaughter and gave her to me as he isn't set up for chickens. First thing I noticed is her foot! Her one foot is fat and has major curled toes best thing I can describe it as is elephantitis my kids call her big foot. I feel bad that her foot is in this condition but it doesn't bother her she runs she walks fine and she is a fantastic layer giving us 2 small light pink eggs a day!!! She is aprox. 1 yrs old.

So I have 2 questions for anyone that has answers.

1.) what is wrong with her foot? Can I fix it somehow?
2.) why does she lay 2 eggs everyday? (My other hens lay the normal 1 egg a day!)
