So i have a ee/americana hen thats on her 3rd egg shes ever laid and has gone super broody and defensive of a group of 5 eggs do you think i should just let her try to incubate them? What the success rate of hens hatching in the winter ?

In TX, the success rate is probably higher in winter than summer.
I sometimes break first time broodies when they have been laying for such a short time.
If you can separate her into her own space with only one nest box, it usually is more successful.
Her eggs are likely quite small so that is another reason to break her this time around.
