I’m pretty sure she’s a Joe Goode Grey, as I was told, but I would like to hear others’ opinions. She lays white eggs with an almost unnoticeable shade of brown/peach. Her name is coco :)

She looks just like the pictures I googled of Joe Goode grey hens. The color is actually silver wheaten, but it's called grey in some types of American game fowl. So, to answer your question, I see no reason to doubt what you were told.

@sdm111 can you help here? I'm not a game person and unfortunately, can't look at a bird and see it's bloodlines.
She looks like a buttermilk grey hen. Could be a joe Goode? Yes. Do certain American games have distinctive traits yes but you can only really go by what the breeders say as far as what family the breed is.
 
you need to go with what the breeder says
But to a point obviously if someone says its a grey but looks like a hatch thats obviously wrong
