Most miss use the word "plan". Woodworkers expect complete dimensions, a supply sheet for all parts and cuts needed. Most have a sketch at best. Few give how many chickens the house will serve.
 
I think it's because most of the coop builders are not expert carpenters. They play by ear and make changes as they discover they need to. If they were selling plans, I would expect all the information you said is missing.

If this helps you at all, rule of thumb is 4-5 sq.feet per bird inside the coop, excluding nest boxes and roosts. 10 sq.feet per bird in the outdoor run. If chickens feel too crowded that may start plucking feathers out of their companions. If they are much too stressed they can resort to canalbalism
