How would I treat the coop as they're sleeping inside while I try figuring out how to treat the coop

Clean out all the bedding. Spray/dust with the permethrin product (I find spray easier). Then add new bedding. You will need to repeat in 5-7 days to kill any newly hatched bugs.

She may be picking and choosing certain bits of the feed instead of eating all of it to get complete nutrition.
Try soaking the feed overnight, then feed it.

Re-check her crop first thing in the morning to make sure it's emptying and keep on top of treat for the lice/mites.
