Sort of crazy hatchery question

So I understand that currently the hatcheries mislabel their EEs Ameraucaunas.
I've read a few times 'if you got it from a hatchery it's not an Ameraucauna' and I am wondering why the hatcheries don't just buy some 'real Ameraucaunas'.
They seem to be popular. They breed. They lay eggs. Shouldn't be too hard to get some, right? So why not?
 
"Real Ameraucanas" do not have the egg production capacities that the easter eggers do.

Hatcheries breed for egg production so that they can sell large amounts of chicks. To them, it just makes sense to use birds that lay more and more eggs in order to sell more and more chicks.
