The SS are probably the most reliably calm and friendly of the three (wyandottes seem to vary a LOT among lines/sources, from what people say; NHR hens are not necessarily that bad but the roos have a bad reputation).

Wyandottes are rose-combed so if frostbite is a concern they are more care-free.

Personally I think SS are the most wonderful chickens, they are not only beautiful but also very easygoing and unstressful to deal with; but of course everyone has their own tastes, plus which lines vary.

I have to say, I am leaning more and more toward SS. Frostbite is not a concern here. Thanks!
