spitting polish

We were given a polish chicken that hatched in July it is a pretty bird seems healthy but has a strange habit. When you pick it up it spits up ALOT of a clear slimey substance. Is this a defense strategy or is there something wrong with it?

My ducks do that and I have always attributed it to stress from being picked up as it usually involved a short chase.

Does your bird only do this when you pick it up?
