Are they a mutation or are they like a 'cross' with say a Red and Yellow?
What would happen if I bred a Dark Throated with a Yellow?

They're hybrids and can continue reproducing. Any pheasant with golden being the second part of their name all come from crossing a amherst and red golden originally. Amhersts and Red Goldens are in the same family, and therefore can reproduce when crossed. If you crossed a dark throat with a yellow you would just get another wierd looking coloration...not sure what exactly.
