I live in farm country. The farmers around here have been around for generations and we all pretty much know everyone. So it's not surprising that they don't mind if we go into the fields after the harvest to grab the leftovers. Right now I have alfalfa and peas (I'm mostly interested in the vines) available to me and pretty soon will have beans (not sure what kind yet). So is there any way for me to store these for the long term or should I just enjoy giving them as treats while they are here?

Store the alfalfa and pea vines as you would hay. There won't be much of the bean plant that they will eat left in the field if they are harvested as dry beans. If you are thinking of gleaning the dry beans, store them in an air tight container. There may not be much on the pea vines after handling either.
