Sudden spike in egg laying within the past 2 days

We've been having terrible weather and really cold temperatures here for a week or two and the egg production dropped to 2-3 eggs a day. The past 2 days we've been getting 5-6 eggs a day despite the weather. And our 2 bantam polish finally decided to start laying as well. So now we have a full 18 carton plus 4 eggs. We already had a dozen in the carton so this added onto what we have.

What's with the sudden spike in egg laying?

12.5 hours of daylight. Sunrise 6:39/Sunset 7:12 here.
I find when available light drops under 12.5 hours so does laying.
Just the opposite in the spring when available light goes above 12.5. GC
ETA; I add light at 5am so egg laying went up here a month ago.
