They say it depends on the amount of sun light the chickens get for them to lay more eggs. Im from melbourne HERE the weather changes every 5mins. So it was sunny all day yesterday i got 3 eggs from my 6hens.and pretty much today it was sunny JUST the same but i only got 1 egg.

If they have full sun light does it depend on that day to lay their egg or will they lay the egg the next day. DOES THAT MAKE SENSE!!!
How and when does it affect the egg?

To stimulate the pituitary gland the sunlight does not need to be intense, short of a total solar eclipse or extreme storm weather there is enough daylight during the sunrise to sunset hours and a little more before and after to stimulate the pituitary gland...

They need about 14-16 hours of sunlight to stimulate the egg production process, and it takes about 25 hours to make the egg...

That said chickens will skip days, there are many factors that delay/slow egg production, not enough light hours, diet, comfort level, stress, molting or extreme temperatures to name a few...
