How does a hen react if she were to hatch chicks/poults and then I were to take them from her to raise inside? Do they get stressed by this or do they just carry on their business ?

Depends on if you take all of them or not.
All of them, yeah, she'll probably be upset and stressed until dark.
Just the runty ones, not at all.
All but one or two, a bit, but then she'll focus only on the ones left

Can I ask why you are taking them away? It might be better to move her and the chicks together if you're worried about cold but the issue I would be concerned about is reintegration.
