Taming Chickens?

I am new to raising chickens, just wanting to find out what others who have experience with them have noticed.
I have 16 chickens total, A mix bunch of chicks(seperated in age). Which range from approx. 10 wks-3 wks.

10 wk chicks(6 chicks- 4 roosters, 2 hens)- Unknown breeds
3 wk chicks- purchased from hatchery(10 chicks- 10 hens)- 2 Rhode Island Reds, 2- Giant White Cochin, 2- Giant Black Cochin, 2- White Leghorn, 2- Light Brahma

1) Do all chickens get to where they can be handled?
2) If a rooster is showing dominance in the flock at 10 wks and aggressiveness towards me, will he be out of control when fully grown?
3) Of the chicken breeds that I currently have, which will be the most productive, and most gentle with my family?
4) At what point should I choose to thin out the flock?
5) When will it be safe to join my 2 flocks?
I have had the younger flock in the coop for approx. 1 week so they could adapt to the older flock. Right now they are seperated by chicken wire.

1) The more you handle them, the more they will tolerate it. Few chickens like to be held. Most of mine are ok with it, I have a few that go ballistic and always will.

2) If you don't show him you are boss while he's young, he will probably get out of control. Pick him up & carry him around often or squirt him with water when he displays aggression.

3) The cochin & brahma are most likely to be the sweetest tempered.
The Rhodies will probably lay the most eggs.

4) When the roos begin fighting.

5) When they are closer to the same size. It will help that they can see each other through the wire.
 
4) If by thinning you mean fried chicken, the roos are most tender and tastiest around 12-16 weeks. They are not full size yet, though. Our RIR and BR were around 2.5 lbs at 13 weeks, and delicious.

Trouble is you won't know for sure which roos will be unfixably mean til around 6 months.
