Go to Porter's Rare Heritage Turkeys. Click on the links for the different varieties such as Bourbon Red, Bronze, etc. The first image will be of the tom of that variety. Scroll down and the next image is usually of the hen of that variety. There is a visual difference that is easy to see in those images.

If you are wanting to tell the difference when they are poults, forget about it and wait until they are old enough to see the difference in physical and behavioral traits.
