I have had a good hatch so far with 30 out of 55 hatched. They started hatching on day 16 and today is day 18. My question is how long until I call it quits? None of the eggs are rocking and no sound.

You can always candle the left overs to see if there is any life in them. Some people do float tests on the eggs. However if you just want to let them be, I usually go about 4 or 5 days past due date. Some do hatch late.
