My coop is currently 40 square feet and my run is 80 square feet. Is this sufficient space for 8 chickens?

Yes that will work for 8 chickens, I just wouldn't add to that number unless your talking bantams.At 40 feet you could add a chicken to the coop but the run is maxed out and crowding chickens is never a good thing if your not free ranging all day.
The minimum is 4 feet in the coop and 10 feet in the run per bird if they are to stay in the run.
