Thermometer - Where do you put it.

For food safety inspection you need to put a thermometer in the first bird you slaughter and log cool down. Where the heck do I put the darn thing. I did a trial run yesterday and am pretty sure I didn't put it where it was suppose to be. If you have a picture, I would appreciate it.

I wish I could help but we don't get inspected because we fall under a USDA exemption and therefore don't have to be inspected.

What is it that you have to log? The rate of cool-down?

I would check along the keel, deep in the breast. Also check in the thigh.
