thermostat

I am looking to build a incubator, but would like a thermostat. I see many posts showing different types of thermostats but it looks really complicated. I am wondering if I go buy a digital thermostat (one used for the home) at a hardware store how hard would it be to hook up to a light so I can set it and forget it lol? Is it a matter of taking the two wires in the lamp and putting them in the thermostat? I know nothing about electrical stuff and can't picture in my head how to possibly hook up a lamp to one so the thermostat will turn the light on and off as needed... my head hurts thinking about it lol!

I used a hot water heater thermostat that I bought at Lowes. It works great and the light kit came from Walmart. They were easy to hook up. Everything else I needed to know I got here on BYC
