things to watch for when processing?

i tried a search, and looked at the sticky on top but couldn't find what i was after. I have turkeys to process and eventually chickens too. I used to do this with my uncle, he knew what to look for, but never taught me and he passed on a few years ago...

Of course we would never butcher an unhealthy looking bird, but is there a website with photos of things to watch for or anything like that?

The actual killing/cleaning and trimming i'm good with. I just want to make sure i'm putting healthy birds in the freezer.

Check out this link. It is a great step by step process of butchering meat chickens, so turkeys would be the same process just bigger birds. It is not for the faint of heart. Good Luck.
