Ooooo, too bad you blocked the space between the rafters at the top of the walls. Either remove that blocking or drill as many 1" holes in them as you can.

How would we extend the roof when it's already installed?
It wouldn't be fun, especially as it looks like you have caulking or construction glue where the fascia attaches to the rafter ends.

Rafters can be extended, see My Coop page, but the blocking is in the way.

My poor husband has worked so hard on this coop and now I come at him with we need more ventilation, I could see him wilt.

What about a turbine at the top?? My dad suggested it awhile ago but maybe it's doable? Would snow block it or get in?
 
Keep your solid door you have there for cold winter months and build a wood-framed hardware cloth door for the summer time. Interchangeable. Or you could cut a window in your current door and then in the winter, cover half of it so there's still ventilation but not an entire window size worth of cold draft.
Also, put an exhaust fan on one of your rectangle cut outs on one end and then put a regular fan on the other end creating air in and air out effect. There are even solar fans on Amazon for decent prices. Open your already installed windows and call it a day!
