To add water or not to add water?

I live in a very dry climate. I have been reading that not adding water is the best, but the humidty in the air needs to be high. Our house is no where near 50% Please help!
 
First 18 days humidity should read around 50%, last 3 days up to 70%. Like the incubator instructions say, you'll see by your first hatch how that works and go from there.

last hatch I did great. 35% humidity days 1-18
65% last three days.

And the humidity in the family room is rarely above 34%
