I am certainly no expert in Halal, but I believe the Koran is very explicit in that the animal is to be handled with respect during it's death. I believe cutting meat or limbs off a live animal is considered Haram (unlawful) according to the laws of the Koran.
As with many of the Jewish Kosher laws, from what I understand, Halal laws were helpful sanitary laws. The idea of Kosher and Halal slaughter (again, this is my underdstanding of it, anyway) is that (as a previous poster mentioned to me) it is CRITICAL that the blood be fully drained from the animal. I think both Kosher and Halal laws say that the blood in a dead animal is poisonous.
To counteract the bad press, there is a great push amongst Kosher and Halal processors to make sure the animal is treated humanely. The processor I was at didn't have any hold-down equipment, and the animals were able to see other animals being slaughtered, but none of the animals seem panicked or particularly stressed. For me, it was just hard to see the throat slit and so much blood; I will admit that the animals went down fast; probably within 20-30 seconds, mostly without a struggle.
