Tough Cornish X ?

I am new here, and need a little advice. I have had my first tough, and I mean tough!, meaties ever. I have raised over 300 a year for several years, and have never had something this tough. My ration is soy meal, corn, alfalfa, oats.....Chill for 4 hours after slaughter......slaughter at 9 weeks. Anyone have an idea of the problem?
 
The only thing I did was up the % of soybean meal to bump the protein up a little after my last two batches didn't grow quite as rapidly as in the past. Surely that cannot be it?
 
Try to get a hold of the trace minerals that go into chick starter. Most likley the upped soy protein is not correctly converting.
Or you could try to extend the rest time after butchering.
