Trying to learn to date eggs.

I work for a place that has a small flock of RIR's and we sell eggs. But I just took over and noone is able to explain to me how to date the eggs using the julian calendar like we should be doing. How long should I make the "use-by date"? And how do I use the chart to do this. I have googled and googled and just am not coming up with the answer. Help! Our farmers market starts in a week!
 
http://www.timeanddate.com/calendar/custom.html?year=2014&cols=3&doy=1&df=1 Here's an online calendar that has the Day-Of-Year numbers also ie an egg that was laid on May 7 has the number 127 since it is the 127th day of the year.
I have no idea what the requirements are so far as putting a Use By date on them, most of the ones from the grocery store etc have 30 days looking at the numbers.
