Turkey advice?

At 7 weeks old, the recommendation is for poults to be on a turkey or game bird grower that is normally 24% protein. All flock is not recommended until they are 12 to 14 weeks old.
Would that be for both BB and heritage turkey?

Yes. The most critical stages of development for poults are the first 12 to 14 weeks.

For those that believe in slower growth for their BB turkeys. reducing the protein after that stage can be effective. Unfortunately the way feeds are made, the lower protein levels also come with lower lysine, methionine and niacin levels which are more important to the poults that the protein amounts are.

When I raised BBs, they gained more benefit from the exercise that foraging caused them do than from anything else. My BBs never got to the sizes that they can get to by 6 months old. Not saying they weren't big, they were in the mid 30lbs. dressed weights but none ever made it to the 40 lbs. range.

Mine also did not develop leg problems because of the proper feed when they were poults.
