turkey sausage questions

Having 4 turkeys butchered today to make way for a bunch of newbies.
Planning to make sausage out of one.
Have a friend who has recently aquired a sausage maker but hasn't used it before so its new for both of us.
Any of you have suggestions on casing choices?
Spices to add?
Technique?

this is making me hungry, I've never had turkey sausage before.
 
So, I am just back from the farm that butchered these 4 turkeys with me. I havent scaled them for weight just yet, being its very warm out ad I wanted to get them into the fridge quick. We were astounded at how much fat one of the two tom's had on his breast - more than a pig! The 2 hens and other tom not at all. However, I think he will have more than enough fat for sausage, no pork needed for sure. Thanks on the responses, any more thoughts out in chicken forum land?
 
were are planning on doing some turkey sausages too. though we lean more towards addind finely mines sweet onions, garlic and assorted herbs with a bit of honey. We like the honey garlic style pork sausages, but want something less fatty. my dad wants to do half pure turkey and the other half 50/50 with turkey/pork. We've got a few months yet before we'll have turkeys big enough to butcher, they are only a bit over a month old right now.
