Two Eggs A Day From Same Hen?

I know I have 1 EE hen in my flock and was getting 1 blue/green egg every day, sometimes every other day & recently she stopped laying completely for about 2-3 weeks. When she did start laying again I noticed there have been 2 blue/green eggs every day. Could she be laying 2 eggs a day now or do I have another hen with the blue/green gene? None of the others look like the EE..the other hens are black sex-link, barred rock, light brahma and a couple of questionable heritage.
 
Is it possible for a hen that doesn't have a muff/beard to still have the blue/green egg gene? Here's a picture of my EE..none of the other hens has head feathers like her.

We just got a 24 week old blue wheaten Ameracauna and she is in quarantine right now in a dog crate in our foyer- first day she came home with us she was set upon by the flock, so she was totally freaked out. She did not lay that day, but yesterday I came home and she had laid two teeny blue eggs! Did not lay again today. Maybe she will get back to a regular rhythm...BTW she also does not have a beard/muff and is a cull from a breeder....
