I have three pullets and a roo all almost a year old. Each has a distinct personality. Each has eaten out of my had and been very gentle if at times skiddish. Ricky, the roo, has gotten progressively very aggressive in the past couple of months. He will eat out of my hand and then attack me. He now attacks anyone who comes near the pen/coop. He got me in the leg this morning. He's like a Ninja, snuck up behind me and bam. For the first time he's looking delicious. He is very gentle with the pullets.

Do they mellow out after time? Or is it Caccitore for Ricky?

Depends on the bird. There are many posts here related to taming unruly roosters if you are interested in investing the time and effort. Just use the search function and look through some old posts. Good luck.

I've had this happen with a few roosters. It seems the hormones go to their heads. There are things you can try to do to tame an aggressive rooster - but I've not found that any of them actually work.

I'm currently roosterless. We gave away an aggressive EE roo a couple of weeks ago. The hens are doing find without him, and the young cockeral in the brooder is learning to crow! I hope he turns out nicer than his predecessor.

The behavior will not go away on it's own. You need to adjust his outlook on life. There are several threads about this very common occurence. Regardless of whatever approach you choose, this rooster should never be trusted around children. The potential for serious injury is too great.
