Using a grinder and meat press....

I've been considering getting a meat press and meat slicer to make our own deli style meats.
I wondered if grinding an older bird and cooking this way in a meat press would make tender chicken to slice for lunch meat? I know older birds can be tough, and maybe grinding and cooking like this would be an idea worth asking about.
 
When grinding it, you're un aligning the meat fibers, chopping them up in to tiny lengths, then reforming them, I would say this would make a nice lunch meat. But experimentation is worth doing.
 
Sausage is a very common thing to make with old birds. There are a few recipes on here from members who love to make it. If the lunch meat idea doesn't work, might consider chicken sausage.
