Using small and medium eggs in recipes

Hi everyone! My chickens just started laying last week, so I am new to using fresh eggs. How do you use small silkie eggs and medium pullet eggs in recipes that call for large eggs? Thanks!
 
I use 1.5 Silkie eggs and Medium eggs per large egg. Though, It is recommended for 2 Silkie eggs per large egg. It all depends on taste. The best way to figure out what works for you is to experiment.
 
Large eggs are just under 1/4 cup in my experience. I just looked it up & a large egg is 3-3.25 TBSP & there are 4 TBSP in 1/4 cup. I have some 2 yo Wyandottes that still lay less than a large egg. I add some water or take out a bit of white, but don't usually worry too much. I'm not cooking or baking anything that the small variation would matter. I have in my head that 4 eggs is 7/8 of a cup. Never had a problem combining bantam or pullet eggs to make the volume of wat i need, even though there is probably more yolk. Have fun!

What I do is convert the number of eggs to weight in grams then use my kitchen scale to weigh the eggs I'm breaking until I get to the required weight in grams.

You can do it in ounces too, knowing that a US Large is 2oz. I just happened to have gotten into the habit of weighing eggs in grams.
