Was wondering if it is ok to grow/eat vegetables grown in/around an area that has rusty brown water running from a natural spring

Sounds like minerals from the water. You can send off a water sample just to make sure it is safe.

Most likely it would be caused by iron. When the groundwater has little oxygen the iron will dissolve into the water. When this water seeps out in a spring and encounters oxygen it precipitates as iron.

In general this would be no cause for concern, but as the other poster said you can send water away for water quality analysis and they could tell you to ease any fears.
