ventalation??

If you have a peaked roof, put the ventilation screens as high as you get get them in the peaks. Also, be sure to cover the screens with hardware cloth. Most screens are just to keep out wimpy stuff, not determined raccoons, etc.
 
This is what works for me and I am in Northern Ontario Canada I have smaller vents in the back

If you put hinged or sliding covers on the vents, you can control how open they are (and on what sides of the coop they're open) depending on the weather.

"At a good temp" depends on what you are thinking of as a good temperature -- well-chosen breeds in dry air are probably a lot more cold-tolerant than you're thinking -- and of course on your climate.

Oh to be in Lousiana! My oh my, we're having a challenging winter.
As Pat says, you can control the vents with baffles and some hardware stores have those rectangular ones that open little metal slots and have screening on the indside. Just check to see what you are using is predator proof.

Just put in LOTS of ventilation, with flaps/covers.

If you get a damp windy day around freezing or below you might want to close off some (concievably all, if you have very vulnerable breeds) of the ventilation temporarily. Pretty much any breed/type is going to be fine down to 40 or so, AFAIK, the vast majority considerably colder than that, especially if the air is dry. You do need to prevent cold air from blowing right at the birds themselves.
