Water kefir for FF?

instead of ACV, would it be possible to use water kefir, or even whey from milk kefir for that matter, to soak chicken feed or make FF?

I don't use anything as it isn't necessary. You are wanting to capture the wild yeasts that are floating around in the air, just as you would for a sourdough starter. Once you have your ferment going you just use a bit of the fermented food to seed the next batch (or just refill the container that you've fed out from).
