It was not as bad as I thought. The end result was a 4lb 8oz beautiful chicken. The thing that was hard was cutting the vein in the neck. I was surprised at how much pressure needs to be applied. Brand new knives from MM too.

Oh yes, a good sharp knife makes all the difference. Once they're dead, it's just meat. Congrats, glad you had a positive first experience.

yesterday was my first butcher also. the hardest part was the first cut. after that it like the last person said its just meat.

Congrats on your first processing. The first cut is definitely the most difficult. We use either a razor blade or scalpel for those cuts, nothing else seems to do the job fast enough.

Thank you for such warm replies. I have to say this is the best chicken noodle soup I think I have tasted. The broth is out of this world! I will try a razor blade next time. We currently have another batch of 12 Cornish X's in the brooder who are two weeks old. This guy was given to me by a lady who bought chicks and realized she had a Cornish on her hands. I feel more confident now after having processed him. Good luck to everyone raising meaties this year!
