Weird and Violent Attacks: Possible Rabid Animal.... Any Ideas?

I'd say badger or wolverine. I've had a badger in my backyard before. They are EXTREMELY capable diggers, which can easily explain the crazed digging around your coop. They are also ridiculously strong creatures. The one in my yard bit and broke a broomstick with just one well-placed chomp. My police-trained German Shepherds were terrified of it. I would put up multiple lines of strong electric fencing for starters. One really close to ground level, and a few more above it.

My first thought was hodag but the OP isn't in Wisconsin.

Seriously, I don't have a good guess besides what has already been proposed and not rejected because of unsuitable habitat.
