My hens are now 2 years old, and I've seen these weird consistency eggwhites when hardboiled more frequently lately...They are really hard to separate from the shell, and are almost mashy or undercooked looking...they smell fine and the yolks are cooked through...what could be going on? I am in upstate NY so the girls are just starting to lay almost daily again...will the whites firm up soon or should I add something to their diet? Thanks!

Are you using eggs that are only a few days old? Very fresh hard boiled eggs are notoriously hard to peel. I've learned to hold eggs back and let them sit on the counter for a day or two if I want to hard boil them.

Here's an excellent thread on the best way to hard boil them. It's worked well for me:

They were within a week old, but I've been boiling eggs the same way for years and only get the mushy whites every once in a while. Is it possible these were eggs that were frozen in the coop? Would that change the white consistently? It has been very cold here this March... Thanks for your response!
