Weird substance under chicken skin?

My husband processed a couple of our chickens today and it turns out 1 of them was egg bound and when he was cleaning her up said there was a viscous liquid under the skin. Does anyone know what this is and is it okay to put the chicken in the freezer for a later date?
 
It's the binding between skin and muscle tissue. Most often found in the 'crevices' of the body (hip joints and 'wing pits'). Some birds seem to have more than others. While other times, it doesn't appear until after it's been rested in the fridge.

I always rest the birds and re-rinse prior to freezing. That's when it most likely shows up in our household.
