Weird..

Ok so this may sound really weird and random, but do chicks poop while they are in the egg...?

(My two year old niece made a comment about that as we were candling the eggs, and I couldn’t find anything on it.)

Not generally. Usually, they hatch before they need to poop. However, I've occasionally found some stuff in the eggs of chicks that didn't hatch as quickly as their siblings did.
