What’s the best heritage breed rooster you’ve ever had?

Best in what way in particular?
I have only had two roosters, and rather a lot of cockerels.
One is a Light Sussex, he is a real gentleman! I would trust him with children of any age, and he is also very good with his hens.
His downside is that he isn't very protective, and would be the first to run from a predator.
My other is a his son, so a light sussex x cuckoo orpington, and is still very polite, but I wouldn't trust him entirely with young kids, but he really keeps a very close eye on the hens.

As much as I liked my Barred Rock I have to lean to a Big deep rich color, high red comb and hanging wattles Rhode Island Red. He would chase cats that came in to our fenced in yard. Was always among the hens keeping an eye on things and didn't balk at warning of possible danger, air or ground.

The cockerels I haven't liked at all, have been RIR x Light Sussex.
They seem to have a not so nice personality most of the time, bold and ruthless if they think they can win, but cowards at other times.
I've got some Marans cockerels in the moment, and I rather like them as well.

Swedish Flower. They have been fantastic guardians of my free ranging flock for 6 years now. Here you can see the dom and the subs working together to shepherd the hens tightly (a neighbour's young new dog and a goshawk were threats at the time); the Swedish Flowers are centre and back; the front two are other breeds.
