I had a light Brahma that was soooo sweet, he went off to live in a bigger flock and the lady said that he continued to be so sweet and was a favorite of the neighborhood kids because he was so gentle and approachable.

What breed out of these is the friendliest?

I would say it is more the individual rooster than the breed, but that said I have never met a nice leghorn rooster. I remember them from my childhood and they were horrible, each and every one, and while Delawares are supposed to be nice I've known multiple aggressive ones so I would stay away from that breed.
Of the others, you might want to choose a breed that matches your hens.
